I’ve been looking for some quick and easy dinner recipes to make on busy weeknights. I found a few great ideas here on my food blog, like 15-minute pasta and one-pan chicken, but I’d love to hear what other mums are cooking too.
What are your go-to meals when you’re short on time but still want something healthy and tasty? 🍽️

  • Pasta bake is always a good one and super easy.
    Macaroni cheese
    Bacon and Egg Pie (Although at the moment getting eggs can be an issue)
    Spaghetti
    Homemade pizza
    Nachos or Tacos
    On the MoMs site is a recipie for Impossible Quiche which i have been using as its awesome


  • Such a great question! I too was interested in these answers as our meals are starting to feel repetitive.
    Weirdly I actually find roast dinners to be the easiest meals to make.
    I buy clean potatoes that don’t require peeling, chop them, pumpkin, zucchini , broccoli carrot (literally whatever) in the oven with a piece of lamb or chicken and cook for an hour. Add some instant gravy and it’s done


  • I was going to say you could use your slow cooker to prepare a meal ahead of time and turn on in the morning and leave to cook all day, other than that my family like Tachos or Nachoes which are quick and easy to prepare.


  • I have a couple of go to’s – whenever the Spice Tailor is on sale in the supermarket, I love to buy those kits as all you need to then add is some meat and veg and serve with rice. I have also found spag bol to be a nice quick one. You can also often find chicken kievs at the deli half price, then I just cook those and serve with mash and veggies. I also find that using my slow cooker is a great time saver. Prep everything the night before and then just turn it on in the morning. You can come home to a hot cooked meal.


  • Satay Chicken using either chicken thighs or breast (you could probably use a firm tofu is you don’t eat meat). Everyone loves it no matter what age the person is. I think it’s not only the taste of the peanut butter but also the texture. You can serve with either microwavable rice or rice noodles (just pour boiling water over them to cook).


  • My go to is always a delicious chicken pesto, i purchase a BBQ chicken, 2x jar of pesto, large thickened cream, 500g pasta and some parmesan cheese.

    Cook the pasta and while thats cooking heat up the pesto pasta add the chicken and make sure its hot, add the cream and a nice layer of parmesan cheese. Simmer for 5 minutes then add the cooked pasta. Its quick, easy and we have left overs for lunch the next day

  • In terms of my go to recipes that my kids love and are super quick in my effort:
    – meatballs (buy meatballs, in an oven dish in the oven for 20 min at 180, pour a can of tomatos and Mediterranean seasoning on the top and cook for another 20min. Serve with pasta that i cook in a microwave rice cooker – takes 45min to make but near no prep)
    – anything with egg noodles, the kids prefer mince and frozen Chinese veg – some garlic, ginger, honey and soy – they always ask for more.
    – ravioli from frozen- 5 minutes from boiling, pour over pasta sauce and add frozen peas while still hot (it will cook itself) and cheese fo course!
    – omelettes with ham and cheese are always a hit and i Serve frozen peas for some veggies while they cook
    – the slow cooked meat from coles/ woolies in the air frier take apx 20min and i serve with mixed vegetables and roast potatos


  • My biggest goal to for cooking is chatGPT. “What can I do with the chicken breast that has a bit of freezer burn and carrots that I need to use up? I have some pantry and veg staples”. This one turned into a morrocan chicken that went in the slow cooker and the kids devoured. I often tell it I want to make it in under 15min, I would like it to be one pan, in the oven or in the multicooker, what i want to serve it with and who it is feeding. My food spoilage has dramatically reduced.


  • Stir frys can be very easy, especially if you pre-cut your veggies, or if you buy the bags of veggies already prepared.


  • I personally love using my slow cooker, especially in winter. So many different recipes on the slow cooker websites and you can just throw everything in and leave it. By dinner time it’s ready. So easy, rasty and delicious. Plus if you make up a double batch you can always reheat the next night or even freeze for later


  • A quick favourite recipe here is;
    Fry a chopped onion together with some chopped gloves of garlic, add a tin of chopped tomatoes, add two tins of green beans (or frozen beans out of the freezer), add tomato paste pepper & salt, cook on low heat till thickens.
    In the mean time boil rice.
    When the sauce is done make holes and add eggs (1 egg per person).
    Top rice with the green bean sauce with hidden egg


  • I find a quick recipe is tuna patties A packet of instant mash potato (hydrated), a can of tuna, salt and pepper and its done. I add vegetables into the mix to make them more nutritious. I add lightly pan fried red capsicum, spring onions, sometimes some corn. You simply need to mix all the ingredients together and shape into patties, roll in some flour and pan fry and serve topped with yoghurt


  • I love dishes like tacos and then the next night we might have nachos with the left over meat or even make baritos or enchiladas depending on what meat is used. That way it is different but similar and you aren’t wasting food. Another idea is to batch cook cannelloni and pull it out on a busy day so all you need to do is reheat it. Pasta always tastes better the next day.


  • I always cook a bit more than we need so I can pop 1 or 2 prepared meals in the freezer; so that on evenings I’m time poor I can just pull it out of the freezer. I also like to stock up on frozen items such as a bag of frozen wedges, a bag of frozen corn on the cob, a box with vegetarian sausage rolls and vegetarian patties. There’s always eggs in the house too and a quick vegetable filled omelette is quite yummie too

If your time poor, 2 minute maggi noodles are nice with buttered toast. If you’re really lazy, any cereal with milk will do! We’ve thought outside the square and done bikkies dunked in milk.

  • Tonight I’m making RecipeTin Eats One-pan baked butter chicken. Prep is 10 mins and can be done in advance and put in the fridge, then cooking is 45 mins. Hardest part is prepping veggies to cook separately (love broc, carrot, pumpkin and zucchini with it). So easy and really delish. Definitely recommend it


  • Along with the list of food ideas in my comments below; I also like to make stir fry meals for the family. They are so easy and simple to make and to serve up for hungry tummies. The key is to have the vegetables and meat prepped and ready to go. I slice and dice and place vegetables in containers, ready to be used in stir fry meals.


  • Roasted chicken breast with pumpkin and potatoes tossed in some turmeric, all season mix, chicken salt , oil and oregano. Goes well with Turkish bread heated in the oven. Very satisfying and comforting dinner on those cold winter nights when the house is cold. The roast will warm you up together with the room.
