  • My go to is called Chicken Ala Stacey – but you can insert your own name or call it whatever you want????

    – Cut 2 large chicken breast in half lengthways
    – Place in a baking dish and baste with Sundried tomato pesto (available at Aldi)
    – Bake in oven on 180 degrees fan forced oven for 15 or so minutes, turning the chicken halfway through
    – while the chicken is cooking mash 2 avocados
    – line baking tray with baking paper and place pieces of baked chicken on tray (set aside left over pesto from baking dish)
    – top chicken with smashed avocado, 2 slices of hot sorpressa salami or 4 slices of normal salami and 1 slice of jarlsberg cheese each
    – Bake in oven until cheese is just melted (do not overcook)
    – drizzle with leftover pesto and serve with the side dish of you choice.

    Bon appetit

  • Shepard’s pie!!! I use marinated lamb or beef that can be shredded, with stock, onion, carrot, Worcestershire sauce, salt and pepper, cooked together on the stove top. Topped with homemade mash potato and lightly brushed with egg in the oven. Absolutely heavenly and perfect as a hearty winter meal.

  • Cannelloni filled with ricotta and spinach. I have never had a complaint with this dish. I serve it with a simple salad and garlic bread. Delicious.
