We have just became empty nesters recently but I am finding that I am still cooking for a family of 4 not just the 2 of us. I am wondering what I could cook that is great for 2 people

  • We still cook for 4 but then pop half of many meals in the fridge for the next alternate night. Less cooking and hassle and dinner is ready in minutes. If I make a tossed salad I make enough to use the next day. I sometimes make double batches and freeze as I go. Life is so much easier. We also alternate turns in cooking so I may only cook 3 times a week as we are often out for one.


  • It really depends on how healthy you want to make it. Some healthy options could be a tomato and meat omlette with a salad or you could do chicken schnitzel or breast with salad or veggies. If you wanted something more cooked, maybe just try some of your favourites like spag bol or curries and then freeze the leftovers to have cook free weeks.


  • We are in a similar situation and with our favourite recipes halving the recipe to make less. I have also looked through recipe books (Jamie Oliver is my favourite) and was found that a large amount of the recipes are listed as 2 serves


  • Another really good thing to do is to have a search in a bookstore for good cookbooks for two. I am a huge fan of cookbooks and love looking through and buying recipe books. Cookbooks are such a good investment for us and we love to try different recipes and food. We modify the recipes for the number of people and for tastes.


  • I always cook for more people anyway because I like to batch food and then freeze some for later. These extra meals are ready to go and then easy and quick to reheat. These type of meals are good to have on standby for holidays and also for times when not feeling well. It is also an incredible time saver.


  • I just scale down recipes to suit what we need, or put the leftovers aside for lunch the next day. What I love doing is buying larger pieces of meat and using them for a few different meals. I just bought a brisket and it’ll first be cooked for burgers, then a ragu style pasta, and Mexican shredded tacos


  • Of course you can keep cooking for four and place what you don’t need in containers in the freezer. There are always nights that this comes in handy when you have a busy schedule yourself or when one of your kids pops in with an empty stomach. Personally I think that everything you cook for four can also be cooked for two.


  • Im lazy so I definitely wouldn’t change the amount I cook. I would keep it for lunch/dinner the next day or freeze it for when I didn’t feel like cooking. That being said, toasted sandwhiches, tins of soup, frozen dinner, salads, baked potato and choice of protein etc are all pretty easy to make portion controlled.


  • Oh congrats on the new stage of your lives! It must definitely feel different not having your children in your home. I would just start by buying less quantities of the ingredients you are cooking with and make smaller batches. You could also freeze left overs so you arent cooking so often? I know when im by myself, i cant be bothered cooking at all!
