My quick and easy go to salad is grabbing a pre cut slaw mix from woollies or Coles, then adding a couple of tablespoons of Aioli dressing with half a tablespoon of water. Goes great on baked spuds.
Packet of rocket leaves, halved cherry tomatoes, sliced avocado, some grated parmesan cheese and a handful of pine nuts. Dressing is a dash of vinegar and a drizzle of olive oil plus some salt and pepper. Simple and refreshing
Warm potato salad with bacon. Approx 1 kg potatoes,2 rashers of bacon, 1 onion 4 tablespoons French salad dressing, 1/2 cup mayonnaise, 1/2 cup sour cream and green peppercorns in the tin or plenty of black pepper
We all love a salad of cos lettuce, sliced brown pear, a few walnuts and a shaving of parmesan cheese with a dressing of balsamic, olive oil, honey, lemon juice and olive oil…. so delicious!!
I pretty much enjoy the goid old garden salad. Tomatoes, lettuce, onion, corn, cheese, egg, beetroot, avocado, cucumber. If I’m feeling a bit fancy, the goid old crunchy noodle oriental salad does the trick
I love a good rainbow salad – corn, avocado, blueberries, capsicum, red onion, snow peas, raw cashews, cos lettuce, fresh basil, fetta cheese and balsamic dressing. Its bright, its easy, kids eat it, adults eat it and it goes with every kind of meat!
I have a Baby Spinach, Avocado, Mushroom, celery and Honey Roasted Cashew Salad that I’m always asked to make. Really easy and the dressing that goes with it is yummy and simple.

Shredded cheese, shredded carrot and a little mayonnaise to bind. Delicious and easy! I even sometimes make a pineapple slaw. Crushed pineapple, shredded carrot and shredded cabbage. It’s very healthy too!
A garden salad and I add avocado, walnuts or cashews along with craisins to make it a little different, if pomegranate is in season at that instead of craisins
Try to make potato salad.
1.5 kg of baby potatoes
3 spring onions – finely diced
4 slices of short cut bacon – finely diced
1 cup of mayonnaise
1/2 cup of sour cream
1 generous dessertspoon of seeded mustard
salt and pepper to taste
Instructions
Cut the potatoes in half and add to a pot of salted boiling water to cook.
Meanwhile, place the bacon and spring onions into a frying pan and cook until the bacon begins to brown.
Drain the cooked potatoes and place into a large serving bowl. Add the cooked bacon and spring onions along with the mayonnaise, sour cream, mustard and salt and pepper.
Carefully mix until all of the ingredients have combined.
Cover the bowl with cling wrap and place into the fridge until ready to enjoy
