Your simplest easiest go to recipe - Mouths of Mums

Hello!

Id love to know what everyone’s EASIEST go to recipe is. If you can share it that would be fabulous! Im so keen to try some new recipes that are super easy and can be added into our weekly routine. I tend to make a lot of roasts because i literally throw everything onto one tray and pop it in the oven – whole chicken, potato’s, carrots, pumpkin, zuchinni (any variety of veggies we have available at the time) then i mix some gravy and we are done. I’d love some new meals that are just as easy but new flavours etc. thank you xx

  • If you have a slow cooker the passage to India butter chicken (standard sauce, I don’t buy the slow cooker sauces) with chicken and optional carrot chunks and coconut cream to taste (I put the coconut cream in about 10 mins prior to serving – the more you add the sauce weakens and you have more sauce). I throw everything in and on low for 3-4 hours. Easy as, especially if you’re using microwave rice. If you like spicy food the other sauces are great too. Another easy meal I use master foods satay sauce in the bottle, carrot chunks and an onion, throw in pan with chicken, if you’re doing on stove top cut carrot thinly, literally when the chicken cooks it’s cooked, I brown the chicken and onion and carrots then add the sauce, you can add coconut cream if you want too – if nut allergies in the house steer clear.

  • I make Zucchini slice or Corn Fritters very often as they are healthy and easy to make adding some extra herbs to add a bit of difference like Turmeric and Ginger. We love these when we have a bowl of soup in winter instead of bread rolls or toast. The kids love these cold and are great for lunch box next day. You can add a tin of tuna for protein or even shredded chicken it all works.

  • Lemon potatoes. Everyone in the family will eat it. It’s filling because potatoes. If I’m feeling generous I’ll add a salad with some sumac and some protein (any meat that can go in the oven or even a sizzle steak) and done. I actually make lemon potatoes quite often but instead of cooking them in a lot of liquid, I condense it down do its more of a flavouring rather than a liquid ☺️

  • I love spinach and ricotta cannelloni. Although it is fiddly to put together, I find it easy to make and you can make quite a few meals out of it. It freezes easily and always tastes nice whether it is fresh or from the freezer. I even make my own sauce to go with it which is always pre made in advance which is time saving too.
