These banana muffins are a treat you can have without the guilt. 65 calories per muffin.


Ingredients (makes 12 Muffins)

  • 250 mls Thickened cream
  • 3 Ripened bananas

Method

  1. Preheat oven to 180• spray muffin tray with rice bran oil. Alternatively you can leave it without spraying.
  2. Mash bananas in a mixing bowl leaving some lumps for texture.
  3. Mix in the cream in a folding motion as you don't want to whip the cream.
  4. Add mixture to your tray, filling them till they almost touch the top.
  5. Cook for 12-15. Or until they spring back once touched in the centre.
  6. Cool in tray for 5 minutes prior to removal.

  • Didn’t work for me. I baked mine for an hour. Still soggy and it wouldn’t stand looking like a muffin. I will add in flour next time. Quite enjoyed the taste of it though.

  • I tried these last night and they didn’t turn out any close to those shown in the picture. They lost half the height and we’re still soft, even after extending the baking time.


    • They are meant to be soft but should still hold as pictured.
      They may not be to everyone’s liking but it’s one of my favs to get rid of ripened bananas 🙂
