These are my go to muffins when I am craving something sweet. They are easy to make and a lot of the ingredients you would already have in your cupboards. Everyone loves them too. I also sometimes don’t put so much butter in them and instead put vegetable oil or I make a banana paste instead to make it a bit healthier.
Ingredients (makes 12 )
- 125g butter, melted and cooled
- 1/2 cup white sugar
- 1 egg
- 3/4 cup milk
- 1 1/2 cups SR Flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 1/2 cups diced apples
- 1/2 cup sultanas
Method
- In a bowl combine butter, sugar, milk and beaten egg
- Sift in flour, cinnamon, salt and mix
- Fold in diced apples and sultanas
- Spoon mixture in slightly greased muffin pans and sprinkle on extra cinnamon if you wish to add an extra crunch on top
- Bake in a preheated 200 degree oven (180 degrees fan forced), for 15-20 minutes or until golden brown
