These little balls are a sweet treat.

  • 1 tbls Castor Sugar
  • 1/4 cup Plain flour
  • 2 tbls Butter
  • 2 tbls Desiccated coconut
  • Extra coconut for rolling

Method

  1. Throw all the ingredients into your food processor or blender. Process until well mixed. Roll into small balls and cover with the extra coconut.

  • These look divine! I will give these a go this weekend as I need to make some little treats for my son’s kinder lunches. Thank you so much for sharing.

  • Also can be made with just dried apricots and coconut. Yum.

  • I remember buying these from the school canteen back in the 90s.. Is there something I could use instead of the desiccated coconut? I actually can’t stand the texture!

    • If these aren’t going to school maybe try ground almonds or some other nuts?

  • Yummy and easy, even let the 26 year old make them to use up some apricots, now I just have to keep his hand out of the Tupperware container, easy to make, but how do you explain to a 26 year old son with hollow legs that just because he rolled them in coconut that they are not all his!!!!! great recipe

  • Yum! These sound really good – a bit like the apricot bars I used to buy as a kid!

    • You are absolutely right! They do sound similar as I remember eating similar bars.

      • You mean Bellis Fruit Bars? They’re still around at the supermarkets, but I think I’d prefer to try this – at least I know what went into them. Wonder how they’d go using sultanas…

  • These look nice. I have never tried apricot balls just chocolate ones. These will be a bit healthier.
