Ingredients (serves 6)

  • 2 kg Chicken pieces
  • 800g Tin Apricot Nectar
  • 2 cups Chicken stock
  • 1/2 tsp Curry Powder
  • 1/2 tsp Tumeric
  • 2 tsp Coriander
  • 2 tsp Cumin
  • 2 tsp Crushed garlic
  • 1 onion loosely chopped
  • 1/4 cup plain flour

Method

  1. Preheat oven to 150°C.
  2. I could advise you here before you start to brown the chicken, onion and spices in a pan to strengthen the flavours. But who has time for that in the middle of the afternoon routine!
  3. I just toss all the ingredients (except the chicken) and mix together. Then place chicken in, cover with foil and cook for an hour.
  4. After an hour, remove foil turn over chicken and cook for another hour or until brown and bubbly.
  5. Serve on top of rice or mashed potato.

  • Have a similar recipe for this dish using dried apricots. Would love to be able to come up with a compromise so I can use my own fresh apricots – think the tree will break with the amount fruit setting this year.

  • I threw this together in the slow cooker earlier today. Delicious. A few additions (and minus the garlic and flour), I squeezed in a few serves of celery, beans, peas, potato, pumpkin, capsicum, spring onion & basil. One of our family favourites. Thanks for sharing.
