I love this satay chicken recipe! It smells so good and it’s really worth the effort!
Ingredients (serves 3)
- FOR THE RICE:
- 1 cup brown rice
- 5 cardamon pods
- 4 dried cloves
- 1/2 cinnamon stick
- 1 dried star anise
- 1 tsp turmeric powder
- 1/2 tsp salt
- 2 1/2 cups water
- FOR THE CHICKEN
- 500 grams diced chicken
- 3 Tbsp natural yogurt
- 3 Tbsp peanut butter
- 1 tsp minced garlic
- 1 tsp minced ginger
- 1/2 tsp salt
- olive oil
Method
- In a big bowl prepare the chicken marinade mixing the yoghurt, peanut butter, garlic, ginger and salt. Add the chicken, mix well and set aside.
- In the pressure cooker add all the rice ingredients, set time to 30 minutes and cook. (If you don't have a pressure cooker, use a pan, but cook for slightly longer, 35 minutes at least).
- Gently heat some olive oil in a frying pan. Cook the chicken (with the marinade) in it. It will take around 20 minutes.
- When the rice is cooked, gently take away the cinnamon stick, star anise and eventually cardamon and cloves if you see them.
- Serve rice and chicken together.
