Bacon and egg picnic pots are perfect little mouthfuls for outings to the park.


Ingredients (serves 6)

  • 6 slices bread
  • 220 g bacon, chopped
  • 6 eggs, lightly beaten
  • salt and pepper to taste

Method

  1. Preheat oven to 200 degrees. Cut the bread into large circles and press into muffin trays and bake for about 5 minutes.
  2. Sprinkle some bacon onto each bread case and pour the egg mixture on top. Add salt and pepper to taste.
  3. Bake in the oven for about 10 minutes or until cooked.

Notes... Ham and other fillings can be used for these tasty little pots.

  • If you’re eating GF you could make these by wrapping the bacon around the muffin tin and cracking the egg inside the bacon to hold it together while it cooks. Either way, they would make a good quick breakfast for schooldays.
