These banana pancakes are a great way to use up over ripe bananas. I also like using the chia seeds as they give the pancakes a bit of texture – they feel a bit like poppyseeds, plus with all the nutritional benefits of omega 3, fibre and protein.
Ingredients (serves 4)
- 1 cup self raising flour
- 1 cup milk
- 1 egg
- 1 tsp vanilla
- 1 banana, mashed
- 2 tablespoons chia seeds
Method
- Heat frypan on medium heat. Grease with butter or oil.
- Whisk milk, egg, vanilla and banana in a bowl. Gradually add SR flour and chia seeds until combined.
- Placed heaped spoonfuls on the frypan and flip until browned on both sides.
- Serve with butter and maple syrup or whatever topping you prefer.
