Banana, ricotta and bacon?! Don’t knock it until you try it!

A savoury and sweet delight that will ignite your tastebuds, you’ll be wondering where this recipe has been all of your life!

This gorgeous recipe has been created by chef Matt Golinski, an ambassador and one of the chefs for Kingaroy BaconFest, which is returning after a two-year hiatus. What better way to celebrate than whipping up this plate of mouth-watering deliciousness?

 


Ingredients (makes 12 )

  • ¾ cup self-raising flour
  • ½ cup milk
  • 1 egg
  • 1 tbs maple syrup or honey
  • 2 bananas, diced
  • 100g rindless streaky bacon
  • 50ml pure maple syrup
  • 200g ricotta cheese
  • 1 tsp lemon thyme

Method

  1. Whisk together the egg, milk and tablespoon of maple syrup.
  2. Place the flour in a mixing bowl, make a well in the centre, and slowly whisk in the liquid until you have a smooth batter. Fold in the diced banana.
  3. Lay the bacon on a tray lined with baking paper and drizzle each piece with maple syrup. Bake at 180°C for 8 – 10 minutes.
  4. Heat a heavy based frying pan and lightly grease with oil or butter. Fry dessertspoon amounts of pikelet mix 6 at a time until bubbles appear on the surface, turn with a spatula and cook for another 2 minutes.
  5. Top each pikelet with a tablespoon of ricotta, a slice of maple bacon and a sprinkle of thyme and serve while warm.

  • Banana and bacon as a combination – hmmm this sounds different but I am sure it taste nice if this recipe has been shared. It is not a combination I would ever think to try but I am game to try it, it sounds intriguing and could end up being a new favourite of mine.

  • I’ve never been able to work out how to stockpile the pancakes on a plate while cooking them and not eating them all before they get to the table – with help from the family too. I’ll have to get these toppings ready first :)

  • Hmmmm, not sure on the banana in the pikelets, banana is quite over powering. I’ll try with plain pikelets first

  • This is a slight twist on what I usually do, which is I make pancakes and serve with crispy bacon and maple syrup. Everyone who has ever had them have been delighted.
