This is a traditional Asian dish. Full of basil and oh so yummy! Feel free to have it with toast as breakfast!


Ingredients (serves 2)

  • 3 handful (about 2 cups ) fresh basil (just the leaves)
  • 2 x (60gm) Eggs
  • 1 teaspoon soy sauce
  • 1 teaspoon Rice bran oil

Method

  1. Heat rice bran oil in a wok.
  2. Beat the eggs in a bowl and add the basil in. mix well. You should barely see the egg in the mixture as the basil is heaps in quantity. But trust me, it taste awesome! This step should take only 20 seconds or less. Meanwhile the oil is heating in the wok.
  3. Add the soy sauce in the egg mix. Pour everything in the wok and grill until egg is cook and slightly brownish.
  4. Serve with rice :)

  • What a vibrant recipe! I’ve never heard of it before. I wonder if it traditionally uses Thai basil, as the recipe says it’s an Asian dish. I love cooking with Thai basil, it’s so aromatic and full of flavour
