Ingredients (serves 4)

  • 1/2 cup plain flour
  • 1/2 cup Paul Newman's Own Creamy Caesar Salad Dressing
  • 1 1/2 cups panko breadcrumbs
  • 8 chicken tenders
  • 80g butter
  • 2 large cloves garlic, crushed
  • 2 Turkish bread rolls, cut in half horizontally
  • 4 middle bacon rashers
  • 4 eggs
  • 1-2 baby cos lettuce, allow 3-4 leaves per serve
  • 1/2 cup extra Paul Newman's Own Creamy Caesar Salad Dressing
  • spray oil
  • shaved parmesan, for serving

Method

  1. Place the flour, dressing and crumbs into 3 separate bowls. Coat the chicken tenders in flour, shake off the excess then coat in the dressing and lastly the crumbs. Chill 30 minutes.
  2. Spray the chicken lightly with oil and air fry at 190 degrees for 20 minutes or until cooked through and golden. Keep warm.
  3. Combine the butter and garlic and spread over the cut sides of the Turkish bread. Air fry cut side up for 3-5 minutes until butter has melted and edges are golden.
  4. Meanwhile: quickly pan fry the bacon until just crispy and eggs to your liking.
  5. To assemble: Place the garlic bread onto serving plates, top with 2 chicken tenders, bacon and egg, (add salt and pepper to the egg if desired). Add the lettuce leaves and avocado then drizzle with extra dressing. Sprinkle over the Parmesan and serve immediately.
  6. Tip! For a super quick mid week alternative use BBQ chicken and store bought garlic bread. Add some anchovies to the stack if desired.

  • This is an amazing idea for breakfast! I can’t eat bacon, but you really don’t need it there, I could happily use either beef pepperoni or even a hash brown! I’ve never thought of making a caesar salad into a breakfast treat, but this just makes a lot of sense! Delish!

  • This looks and sounds both delicious and healthy. It’s also very easy to make especially if you use a BBQ chicken. I need simple things to prepare for myself so that I make sure to eat properly. When I’m alone I tend to go for whatever’s in the fridge. Now I have a much better meal to make. Thank you

  • I love, love a Caesar salad and this recipe is such a fun and exciting take on the original.
    It would be perfect for lunch time options when having guests over for a light meal option or a light summer time dinner meal as well. Garlic bread is always a winner too.

  • Think I will pass this one on, as the only thing what I like and eat of these ingredients are the lettuce and the egg (and that’s a bit plain). However my husband might like to eat this, but being the only one it might be too much work to only make this for him :)

  • This dish is such a simple and easy dish to make. Lots of flavour and full of colour. It is a meal you could eat for any meal. It is like a Cesar salad but on a plate with a piece of bread. I love love love this. Great dish for summer and it would keep you full for hours.

  • Love, love, love a good chicken caesar salad. It may not be the healthiest or thr lightest salad around but it sure does taste amazing. I really love the addition of the avocado in this one as well for some good healthy fats but it’s definitely a no to the anchovies for me.

  • I really do like a good and tasty salad dressing on a fresh salad and in a yummy recipe. This recipe looks so incredibly tasty and would be so good cooked and served for a brunch. I do love to eats lots of yummy avocado and it is so inviting in this dish.


    • Chicken and bacon and avocado would have to be some of my favourite foods to eat at brunch. I love to have a good portion of protein at breakfast and chicken hits the spot. This would also be a good meal to cook when family and friends come over for weekend brunch.
