My kids love boiled eggs in their lunchboxes so I often make a couple of extras and have them for breakfast. I used to have them on turkish toast but since discovering Golden® Crumpets with Oats, these are always my go to when I want something filling for breakfast.


Ingredients (serves 2 | makes 2 Crumpets)

  • 2 Boiled Eggs (hard or soft depending on how you like them)
  • Handful Baby Spinach Leaves (fresh or blanched - your choice)
  • Sprinkle Dried Chilli Flakes (or fresh if you have it)
  • 1 tsp Butter
  • Pinch Salt & Pepper

Method

  1. Put the eggs on to boil
  2. Pop the crumpets in the toaster and toast to your liking
  3. Shell the eggs once boiled and cut in half
  4. Butter the crumpets, top with spinach, eggs and a sprinkle of chilli
