My kids love boiled eggs in their lunchboxes so I often make a couple of extras and have them for breakfast. I used to have them on turkish toast but since discovering Golden® Crumpets with Oats, these are always my go to when I want something filling for breakfast.
Ingredients (serves 2 | makes 2 Crumpets)
- 2 Boiled Eggs (hard or soft depending on how you like them)
- Handful Baby Spinach Leaves (fresh or blanched - your choice)
- Sprinkle Dried Chilli Flakes (or fresh if you have it)
- 1 tsp Butter
- Pinch Salt & Pepper
Method
- Put the eggs on to boil
- Pop the crumpets in the toaster and toast to your liking
- Shell the eggs once boiled and cut in half
- Butter the crumpets, top with spinach, eggs and a sprinkle of chilli
