I love this recipe for something a bit different for breakfast. It's also great to grab and go if you're in a rush


Ingredients (makes 1 large 'cake')

  • 2 cups Milk (I use skim, but full cream also works)
  • 2 cups Oats
  • 1/2 cup Blueberries
  • 1/4 - 1/2 cup Chopped dried apricots (to taste)
  • 1/4 Cup Slivered almonds
  • Cinnamon (to taste)
  • 1 tsp Vanilla extract
  • 1/4 cup Maple syrup

Method

  1. Mix all together well, place into a greased pie dish and cook at 180 degrees for about 40 minutes or until golden.
  2. Allow to cool and serve at room temperature with Greek yoghurt

Notes

This is best eaten within 4 days. Store in an air tight container.

  • That’s a nice and simple oatcake. My daughter would like it for sure :)

  • This would be idea for early risers or on the go breakfast. One of my sons has trouble getting up early and buys something on the way to work. Have pinned this for later. I wonder about the blue berries too, might try the frozen ones.
