I love this recipe for something a bit different for breakfast. It's also great to grab and go if you're in a rush
Ingredients (makes 1 large 'cake')
- 2 cups Milk (I use skim, but full cream also works)
- 2 cups Oats
- 1/2 cup Blueberries
- 1/4 - 1/2 cup Chopped dried apricots (to taste)
- 1/4 Cup Slivered almonds
- Cinnamon (to taste)
- 1 tsp Vanilla extract
- 1/4 cup Maple syrup
Method
- Mix all together well, place into a greased pie dish and cook at 180 degrees for about 40 minutes or until golden.
- Allow to cool and serve at room temperature with Greek yoghurt
Notes
This is best eaten within 4 days. Store in an air tight container.
