Quick and easy breakfast or snack for the kids that can be made the night before. This would be enough for 2 serves for my daughter. Use whatever size cup/bowl you would like and adjust accordingly.

Ingredients (serves 2)

  • 1.5 Weetbix
  • 200 g Greek yoghurt
  • 1/2 c Purée mango
  • 3/4 c Mixed berries

Method

  1. Crumble up some weetbix as the base
  2. Top with some purée mango
  3. Add a couple of teaspoon of Greek yoghurt
  4. Add half a handful of frozen berries
  5. And repeat step 1 through to step 4

Notes

Use whatever fruits you would like, doesn’t have to be purées or frozen, fresh works too!

  • Looks like a delicious way to start the day. And the bonus of making it ahead, is a great idea.

  • That’s a good one. I think best for summers where you get fresh mangoes. Hmmm yummmy.

  • What a great way to use up the Weetbix that my children have decided they don’t like any more.

  • So simple to make and oh so yummy.

  • This looks delicious but wouldn’t the weet-bix be dry? This would probably be something I would make the night before so that the week-bix softens.

    • Did you give this a try? If so any feedback on how the weetbix went when left overnight? I was also worried about them being too dry if served immediately, but didn’t know if they’d go soggy overnight?

  • This looks really yum thanks for sharing.

  • This is genius!
It is also so healthy as well and look like something you get from a cooking show.
Just wondering if the weekbix stays dry?
