A pasta that the whole family will enjoy!


Ingredients (serves 4)

  • 1 Onion
  • 1 Red capsicum
  • 8 Button mushrooms
  • 2 Chicken breast
  • 5 Cloves garlic
  • 1 Jar tomato purée
  • 1 600 ml cream
  • 1 Teaspoon mixed herbs
  • 1 Tablespoon Cajun spice
  • 2 Teaspoons salt
  • 1 Teaspoon black pepper
  • 1 Tablespoon Italian herbs
  • 1 Pack penne or tagliatelle pasta
  • 3 Tablespoons oil!

Method

  1. Get a big pot fill with water and bring to the boil add some salt and a touch of oil. Add your penne and cook till Aldante about 12mins
  2. Thinly slice your onion, capsicum and mushrooms. Crush your garlic to a fine mince. Dice your breast into about 2cm cubes and cover in Cajun spice.
  3. Get the pot that you boiled your pasta in add a couple of tablespoons of oil cook your chicken till browned. Remove from the pan.
  4. Add another table spoon of oil and cook your onion garlic mushroom and capsicum till soft. Add your spices and herbs and salt cook for a few more mins then add your tomato purée in and cream add about a cup of water and bring to the boil, add your chicken back in and your penne. Cook for another five mins. Top with Parmesan and enjoy!!!!

  • I’d leave the mushrooms out but I’d definitely give this a try. Will have to keep an eye out on where to buy the spices
