A pasta that the whole family will enjoy!
Ingredients (serves 4)
- 1 Onion
- 1 Red capsicum
- 8 Button mushrooms
- 2 Chicken breast
- 5 Cloves garlic
- 1 Jar tomato purée
- 1 600 ml cream
- 1 Teaspoon mixed herbs
- 1 Tablespoon Cajun spice
- 2 Teaspoons salt
- 1 Teaspoon black pepper
- 1 Tablespoon Italian herbs
- 1 Pack penne or tagliatelle pasta
- 3 Tablespoons oil!
Method
- Get a big pot fill with water and bring to the boil add some salt and a touch of oil. Add your penne and cook till Aldante about 12mins
- Thinly slice your onion, capsicum and mushrooms. Crush your garlic to a fine mince. Dice your breast into about 2cm cubes and cover in Cajun spice.
- Get the pot that you boiled your pasta in add a couple of tablespoons of oil cook your chicken till browned. Remove from the pan.
- Add another table spoon of oil and cook your onion garlic mushroom and capsicum till soft. Add your spices and herbs and salt cook for a few more mins then add your tomato purée in and cream add about a cup of water and bring to the boil, add your chicken back in and your penne. Cook for another five mins. Top with Parmesan and enjoy!!!!
