I got the receipe from high school home eco class, and I have been making it ever since – the little marzipan carrots are easy enough for little people to help
Ingredients (makes 1 cake)
- 1/3 Cup Vegetable Oil
- 1 Cup Brown Sugar
- 2 Eggs
- 1 1/2 Cups Grated Carrot
- 1 Cup Self Raising Flour
- 1/2 Cup Choppped Walnuts
- 1/2 teaspoon Vanilla Essence
- 1/2 teaspoon Cinnamon
- 125 grams Cream Cheese
- 2 tablespoons Icing sugar
- lemon juice
- marzipan and food colouring
Method
- Set oven to 190C. Combine oil, eggs and butter. Add all other ingredients, mix well.
- Bake in greased tin for 50 minutes. Allow to cool.
- Beat cream cheese,icing sugar adding a little lemon juice at a time until smooth and creamy. Spread over cake
- Roll out marzipan, form into little carrots and paint with food colouring.
