This is the best thing you’ll ever eat!! Traditionally South African, as am I and all good things ;) this is a much better tastier and healthier version of American beef jerkey


Ingredients (makes 5 Approximately 700g)

  • Sliverside 1.5kg
  • Brown vinegar 4 cups
  • Coriander seeds 6 tbs
  • Cayenne-pepper 1 tbs
  • Garlic powder 2 tbs
  • Brown sugar 2 tbs
  • Black pepper 2 tbs
  • Fruit chutney 2 tbs

Method

  1. Rinse silverside well and cut into small bite sized strips and place in a large freezer bag
  2. Toast coriander seeds and place into mixer with all other dry ingredients Pulse lightly a few times ( you still want some of your coriander seeds intact )
  3. And the dry mixture to the meat and toss through the bag giving a light coating
  4. Add vinegar and fruit chutney Push out any air and seal the bag Place in the fridge for at least 12hrs flipping the bag every few hrs to ensure all meat is coated
  5. Remove from bag and spread the strips over dehydrator trays, place into a food dehydrator at 60 for 11-16 hrs rotating the trays every 3-4 hrs
  6. Allow to reach room temp and place in a sealed container for around a week or vacuum seal for up to 3mths

Notes

You can add chilli powder for an extra bit of bite or any other seasoning you think would go well

    • This is the one reason I brought a dehydrator, I love biltong so much but it’s so expensive in Australia. The dehydrator cost me less than buying a kg of biltong lol…
