Tagine is a middle eastern the stew, which generally incorporates savoury and sweet ingredients.

This meal is not spicy at all (a little chilli can be added for a kick) and is a family friendly meal that is delicious served with cous cous.


Ingredients (serves 8)

  • 1.5kg Chicken Thigh Fillets (skin off) cut into 3cm pieces
  • 3 Onions brown sliced
  • 5 Garlic cloves minced
  • 1 cup Chicken stock
  • 1 can Chickpeas
  • 2 cups Dates whole pitted
  • 1 1/2 cup Water boiling
  • Spice Mix:
  • 1 tbl Tumeric
  • 1 1/2 tbl Sweet paprika
  • 2 tbl Coriander ground
  • 2 tbl Cumin ground
  • Garnish (optional):
  • Chopped almonds/cashews
  • Coriander

Method

  1. Place dates in a bowl and pour in boiling water.
  2. On medium heat drizzle olive oil and add in onions in a pot. Once onions start to soften and brown stir in garlic until fragrant and then add chicken.
  3. After cooking chicken for a couple minutes stir in the spice mix, chicken stock and dates along with the water it was in. Season with salt and pepper, turn to a low heat and cover with lid for 30mins.

Notes

Don't let the spices deter you from this dish. This is a family friendly meal and the sweetness of this dish

  • This sounds absolutely delicious! I would probably add in some veggies, but that wouldn’t be hard.


    • Recipes are always easy to modify and adding vegies is always a good idea.
