Plenty of different ways to cook this. Hope I have not made it confusing.
I found this recipe in a book that I was given about 5 or more years ago and I have made it ever since.
It was the first time making it in the Airfryer so I portioned the chicken and basil cream sauce into serving sizes. This is a great way to serve.


Ingredients (serves 4)

  • 4 chicken breasts or a tray of tenderloins
  • 3 tbsp flour.
  • 1 tbsp olive oil
  • Freshly Ground salt & pepper
  • BASIL CREAM SAUCE
  • 1 tbsp butter
  • 2 cloves of garlic crushed
  • 1/2 cup chicken stock
  • 1/2 cup of cream
  • 65ml lemon juice
  • 2 Tbsp basil finely chopped
  • Fresh ground pepper and salt
  • Serve with rice.

Method

  1. Combine flour, pepper and salt in a bowl and coat the chicken in the mixture shaking of excess.
  2. Heat oil and butter in pan and cook for a minute or 2 sealing the coating.
  3. I then placed the chicken into the small casserole dish I had, I also cooked it in serving sizes as per photo. Added cream, garlic, chicken stock, cream and lemon juice,basil and salt and pepper to the chicken and then placed it in the airfryer until cooked. (so in other words just chucked all the basil cream sauce ingredients in) If you don't have an Airfryer you can place it all in a casserole dish and cook it, or cook the chicken for 5 minutes either side then wipe out the frypan and heat the butter, add the garlic and cook for 2 minutes. Add chicken stock, cream and lemon juice. Bring to the boil and reduce a little. Just before serving, add the basil pepper and salt and serve the sauce over the chicken.
  4. Serve with rice.

  • I’d love to try this recipe but, again, it contains citrus so I’ll pass this recipe on to my DIL because I know she will love it. Must start using my air-fryer more for recipes too. It does look tasty though
