In South America every family has their own version of a Salsa and this is my family’s. Salsa was accompanied in every meal and was even on the table during breakfast, yes we love salsa.

Tips:
– The key to a great salsa is quality ingredients, don’t cheap out as this gives the ultimate flavour to the overall dish
-Peeling tomato: place a small x incision at the bottom of your tomato. Place in a pot of boiling water for a minute and then place in a bowl of ice cold water. This is the easiest way to peel a tomato, alternatively use a small serrated knife (I was taught to do this over the salsa bowl to avoid losing any juices of the tomato)
-Chilli; the heat is all up to you and try and use a chilli sauce that has no additional ingredients to it as this will affect the overall taste. You can also use brined chillies. Use the brine the chillies are in, in place of the white vinegar.
-Garlic; I love garlic and use more than the recipe says, use as many as your heart desires.

Ingredients (serves 8)

  • 6 Tomatoes peeled and diced small
  • 2tbl Chilli sauce
  • 1 Lemon juiced
  • 1 Coriander bunch (leaves only) chopped
  • 2 Garlic cloves minced
  • 1/4 cup Extra virgin olive oil
  • 3tbl White vinegar
  • Pinch Caster Sugar
  • Pinch Sea Salt Flakes

Method

  1. Mix all your ingredients in a bowl, allow to sit for an hour before serving.

  • Salsa is such a good topper for many dishes. I always add extra coriander.
