Chilli dogs – an easy mince mixture that can be used two ways.


Ingredients (serves 4)

  • 250g Beef Mince
  • 1 sachet Taco Seasoning
  • 1/2 Brown Onion, Diced
  • 1 Small Can Kidney Beans
  • 1 Small Can Corn Kernels
  • 400g Can Diced Tomatos
  • 1 Tbsp Oil
  • 6 Small Bake at Home Rolls
  • 3 slices Cheese, Halved

Method

  1. Heat the oil in a large pan. Cook mince halfway, then add diced onion, taco seasoning, corn, beans and tomatoes. Cook on medium heat until onion is soft and mince is cooked through. Let it cool.
  2. Preheat oven to 180C. Slice dinner rolls open and put a spoonful of mince mixture in each one. Top with a slice of cheese. Bake until cheese melted and rolls crispy.
  3. Alternatively, use tortillas instead of rolls and make quesadillas with the mince mixture. Simply heat up a toasted sandwich press, lay down a tortilla, add a spoonful of mince, add a handful of grated cheese and top with another tortilla. These only take a minute to cook in the press and it saves mess that comes from trying to flip them in a pan.
