This sweet potato soup can be made spicy or if your not a spicy person then you don’t have to add the chilli flakes.


Ingredients (serves 6)

  • 2 Sweet Potatoes
  • 5 White potatoes
  • Corriander
  • Basil
  • 1 Onion
  • half Garlic clove
  • 3 Cubes Vegetable stock
  • Chilli to taste
  • Milk or cream to taste

Method

  1. Dice onion and add to the oil in big soup pot. Cut the potatoes in cubes.
  2. After the onion has fried with the oil add hot boiling water to fill the pot. Add the potatoes and vegetable stock (3 cubes)
  3. Once the potatoes are soft, blend remaining ingredients with the potato's and liquid. Add some milk or cream if you prefer and then you have your yummy soup. Add Chilli flakes on top.
