These Choc Chip Cornflake Cookies are a tasty chocolatey twist on a classic cookie. Perfect for morning tea and of course school lunches!

Ingredients (makes 30 Cookies)

  • 250g Butter - Room Temp
  • 1Cup Caster Sugar
  • 2 Eggs
  • 2 Cup Self Raising Flour
  • 1/2 Cup Chocolate Chips
  • 1/4 Tsp Salt
  • 5 Cups Cornflakes

Method

  1. Preheat the oven to 180C and line 2 baking trays with baking paper.
  2. Use electric mixer to beat the butter and sugar in a bowl until pale and creamy. Beat in the egg. Fold in the flour, chocolate chips, 1 cup of crushed cornflakes and salt, then mix until well combined.
  3. Pour the 2 cups of cornflakes in a bowl. Spoon slightly heaped tablespoonfuls of the butter mixture into the cornflakes. Toss the mixture gently in the cornflakes to coat and form into balls.
  4. Place the cookie balls, on the prepared trays. Flatten slightly with a fork. Bake for 15-18 minutes or until golden. Cool the biscuits for 10 minutes on the trays before transferring to a wire rack to cool completely.

  • Looks and sounds easy but what do you do with the other 2 cups of cornflakes. 1 cup goes into the mix and 2 cups to cover the biscuits in. Just wondering

    • Was wondering this myself, can understand missing the “s” on the eggs but where do the extra cornflakes go.
