These Choc Chip Cornflake Cookies are a tasty chocolatey twist on a classic cookie. Perfect for morning tea and of course school lunches!
Ingredients (makes 30 Cookies)
- 250g Butter - Room Temp
- 1Cup Caster Sugar
- 2 Eggs
- 2 Cup Self Raising Flour
- 1/2 Cup Chocolate Chips
- 1/4 Tsp Salt
- 5 Cups Cornflakes
Method
- Preheat the oven to 180C and line 2 baking trays with baking paper.
- Use electric mixer to beat the butter and sugar in a bowl until pale and creamy. Beat in the egg. Fold in the flour, chocolate chips, 1 cup of crushed cornflakes and salt, then mix until well combined.
- Pour the 2 cups of cornflakes in a bowl. Spoon slightly heaped tablespoonfuls of the butter mixture into the cornflakes. Toss the mixture gently in the cornflakes to coat and form into balls.
- Place the cookie balls, on the prepared trays. Flatten slightly with a fork. Bake for 15-18 minutes or until golden. Cool the biscuits for 10 minutes on the trays before transferring to a wire rack to cool completely.
Notes
When you make these Choc Chip Cornflake Cookies you can substitute the chocolate for sultanas if your after a more classic cookie. You can also substitute the cornflakes for Just Right, Sultana Bran or even Coco Pops!
