Ingredients (makes 6 Pancakes)

  • 1 cup All purpose flour
  • 1 tbsp Sugar
  • 2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 Large Egg
  • 1 cup Milk (can use coconut, almond or dairy milk)

  • 1/4 cup mini chocolate chips

Method

  1. In a mixing bowl, combine the flour, sugar, salt and baking powder.
  2. Add the egg, milk, vanilla extract and vegetable oil and stir until combined but lumpy.
  3. Fold in the chocolate chips.
  4. Heat a pan over medium heat. Spray with cooking spray. Pour ¼ cup of batter for each pancake into the pan. When the top starts to get bubbly, flip over and cook for an additional 1-2 minutes.
  5. Top with powdered sugar and serve with pure maple syrup, if desired.

I always go to a shake mix. It’s pure laziness. I’m also in a rental which has a TERRIBLE kitchen, especially if miss 5 and mr 2 want to help.

But this looks too good to pass up!

  • You can use any dairy free milk if you need / want to.
You can also get dairy free “chocolate” if you need to. Cacao. You may have to get some that you can chop into small pieces or grate
