An elegant treat for afternoon tea, these are surprisingly simple to make


Ingredients (makes 16 5cm eclairs)

  • 55g Unsalted butter
  • 150ml Water
  • 70g Plain flour
  • Pinch Salt
  • 2 Eggs, beaten
  • 1/4 tsp Vanilla extract
  • FILLING
  • 300ml Thickened cream
  • 2 TBS Icing sugar, sifted
  • 1 TBS Cocoa
  • 1 TBS Icing sugar, sifted
  • 1/2 tsp Vanilla extract
  • 2 TBS Bailey's (Optional)
  • TOPPING
  • 25g Unsalted butter, chopped
  • 100g Plain chocolate, chopped
  • 1 TBS Icing sugar, sifted
  • 2 tsp Milk

Method

  1. Pre heat the oven to 200 degrees, and line a baking tray with baking paper
  2. Put the butter and water into a heavy base saucepan and heat gently until the butter has melted. Increase the heat and bring to the boil, and then remove from the heat.
  3. Sift in the flour and the salt, then return the pan to the heat and stir together until the mixture makes a smooth ball that leaves the sides of the pan clean. Leave to cool for at least 15 minutes
  4. Gradually beat in the eggs, mixing well after each addition, until the mixture is smooth. Stir in the vanilla.
  5. Spoon the mix into a large piping bag fitted with a plain, 1.5cm nozzle, and then pipe 5cm éclairs onto the baking trays.
  6. Bake in the pre heated oven for between 10-20 minutes or until well risen and crisp on the outside. Make a slit in each éclair to allow steam to escape, then put back into the oven for 2-5 minutes. Remove and allow to cool
  7. About 1 hour prior to serving, make the filling by sifting together the cocoa and the icing sugar. Add the cocoa/sugar mix, *if adding* Baileys and vanilla to the cream. Whisk or beat until soft peaks form . Put the mix into your piping bag fitted with a star nozzle, and pipe into the éclairs.
  8. For the topping, put all ingredients into a heatproof bowl, set the bowl over a heavy based saucepan of gently simmering water, and heat until melted, smooth and glossy, stirring once or twice.
  9. Spoon this over the éclairs, leave to set for 15 minutes then transfer to a serving plate
