A comforting meal that everyone will enjoy, even fussy toddlers.
Ingredients (serves 4)
- 1 Tbsp Oil
- 1/2 Onion, diced
- 2 Carrots, diced
- 1 Clove Garlic, Crushed
- 500g Beef Mince
- 400g Chopped Tomatoes
- 2 Tbsp Tomato Paste
- 250ml Beef Stock
- 1 Tsp Dried Mixed Herbs
- Dash Worcestershire Sauce
- 1 1/2 Cups Frozen Peas and Corn
- 3 Large Potatoes
- 1/2 Cup Warm Milk
- 40g Butter
- Handful Grated Cheese
Method
- Preheat oven to 190•C
- Heat the oil in a large frying pan over medium heat. Add the onion, garlic and carrot and cook until soft. Add the beef mince and cook until brown.
- Add the tinned tomatoes, tomato paste, beef stock, mixed herbs and Worcestershire sauce. Add peas and corn, then stir to combine. Cover and simmer for 30 minutes.
- Meanwhile, boil the potatoes until soft. Drain and mash with butter and milk.
- Spoon mixture into a casserole dish. Top with mashed potatoes and sprinkle with cheese. Bake for 30 minutes.
Notes
*I don’t actually measure the peas and corn, I just pour them in until I am happy with the amount. 1.5 Cups is just an estimate. *I am not an onion fan so never use more than 1/2 an onion, you can add more if that is how you like your food. Same with garlic.
