  • 4 Ingredients

Ingredients (serves 5)

  • 500gm chicken (I used breast but thigh should work just fine)
  • 1-2 cups plain flour
  • 4 cups cornflakes, lightly crushed
  • 2-3 eggs, lightly beaten

  1. Preheat the oven to 180C, 160C if fan forced
  2. Cut up the chicken in to pieces approximately 3-5cm long and 2cm thick
  3. Place eggs, flour and Cornflakes in separate bowls.
  4. Cover chicken pieces in flour, then egg and then roll in Cornflakes. You may need to press them on slightly.
  5. Place on lined greased tray.
  6. Bake in over for 30minutes until they darken in colour slightly. Adjust time depending on your oven
  7. Serve with your favourite salad or vegetables and dipping sauce

This is a favourite of my children.

  • Ive just ordered an air fryer and would love to give this a go in my new machine

  • Simple and effective. Love it

  • This is a great recipe we can have tonight since we’re having chicken drumsticks. It will be an interesting change to plain drumsticks

  • This is so inventive, I would have never thought to use corn flakes but this would give it a nice crunchy texture.

  • Ahhhhh, a great use for those cornflakes that often don’t get eaten!

  • Love a healthier home cooked KFC delicious.

  • Never thought about using corn flakes

  • oh yum, this sounds really good!

  • I’ve done this with fish but I crunched the cornflakes a lot more. The kids love it.

  • This looks rather lovely, thank you.

  • Reminds me of a chicken recipe my mum used to cook! Will have to try this out, I always loved my mums cornflake chicken

  • My fave crumbs for chicken at the moment are panko. I like them because they seem to be bigger, crunchier and provide more texture. I think cornflakes could definitely do the same. Thanks for the idea.

  • looks nice. Only a pity that many types of cornflakes are so unhealthy, processed and loaded with sugar…

  • Looks wonderful

  • well crushed cornflakes can be used instead of breadcrumbs for many recipes instead of bread. You used to be able to buy them as crushed but I haven’t seen them for a long time. Maybe they are only supplied to restruants, caterers etc. now. This recipe could easily be converted to gluten free by changing the flour and gluten free cornflakes which are now available in the supermarkets.
