Who knew carrot cake is so easy to make?!
Ingredients (serves 12)
- 2 cups grated carrots
- 3 eggs
- 1/2 cup vegetable oil
- 1.5 cup wholemeal SR flour
- 1 tsp cinnamon
- 1/2 cup raw sugar
Method
- In a large bowl, whisk eggs and oil together. Add in flour, cinnamon and sugar and continue to mix.
- Add in carrots and mix until all combined.
- Bake in a loaf pan for 45 to 60 minutes. 200C.
