Quick, easy and cheap broccoli soup even the kids will love!

This recipe is super quick and easy not to mention  cheap and absolutely yummy too. Even my 2yr olds love this. If your after a thicker soup try adding in a couple of potatoes or reduce the amount of stock. My kids love it as it is. They like to drink it from a cup.

Broccoli Soup


Ingredients (serves 6 | makes 6 to 8 Bowls of soup.)

  • 2 Bags of frozen brocolli
  • 4 Garlic cloves chopped
  • 1 Ltr chicken stock
  • 3/4 Cup of cream
  • 1 Cup of grated cheese
  • Salt and pepper to taste

Method

  1. In a large pot add all your frozen brocolli, garlic and chicken stock. Cook on medium heat untill brocolli is soft enough to squish with a fork.
  2. Using a stick blender, blend brocolli mixture untill smooth.
  3. Once smooth add in cream, cheese and season to your taste. Add a drizzel of cream on top to serve or maybe even some cheese and croutons.

  • I have been cooking broccoli soup for years, it is the best and very healthy! I use coconut cream and vegetable stock instead though and it’s always nice to cook the broccoli florets with the sliced stalks in olive oil and butter initially as well to add creaminess.


    • A creamy version of this soup is also appealing.

    We would leave out the Garlic as my daughter and I aren’t fans but otherwise this sounds delish!
