A quick and easy homemade pasta recipe using plain flour and eggs. Serve with your favourite pasta sauce for a delicious dinner.


Ingredients (serves 6)

  • 4 Eggs room temp
  • 375g Plain flour(can substitute 1 cup semolina for flour)
  • 1/2 tsp Salt

Method

  1. On a clean bench sift flour and salt make a well in the centre for eggs. Lightly whisk eggs and place in the centre. Mix until ingredients combined.
  2. Lightly flour surface, then with the heel of your hand knead the dough turning it a quarter turn at a time. Dough should be smooth and elastic when finished. Kneading is about 7 minutes. Rest the dough 10 minutes in a damp tea towel.
  3. If you have a pasta maker roll out pasta by putting on a larger setting eventually rolling through a smaller setting. If not using a machine, flour a rolling pin and roll out by hand and cut to size. For ravioli cut into squares and seal with water, filling can be ricotta and cheese, vegetable or meat.

  • I have not make pasta at home since my machine broke, must invest in a new one as nothing beats fresh pasta.
