A simple, rich, moist cake for those who love the choc orange flavour combo. BONUS- it keeps so well in the fridge!


Ingredients (serves 10)

  • 1 cup Sugar
  • 225gm Butter (salted)
  • 4 Eggs
  • 1 Whole Orange, cut into 4, peel and all
  • 1 cup NESTLE Dark Choc Bits (and a handful for snacking on)
  • 2 cups S/R Flour
  • 1 cup Sugar
  • I 1/4 cup Water
  • 1 Cinnamon stick
  • 2 Star Anise
  • 1 The rind of 1 orange finely sliced
  • 1 The juice of that orange
  • ** PLEASE NOTE- the first 6 ingredients are for the CAKE, the next 6 are for the SYRUP

Method

  1. Cream Butter and Sugar in a mixer
  2. Blend Orange pieces and eggs together in a blender until completely obliterated and combined
  3. Combine with butter and sugar in mixer
  4. Add flour and chic bits and combine until smooth batter consistency
  5. Bake in a large cake tin at 180 for 50 mins (may require more time if not fan forced)
  6. Meanwhile add all syrup ingredients to a small pot and bring to the boil on stove, then simmer until slightly thickened (approx 5-10mins).
  7. Allow cake to cool for 10 mins before poking through the top with a skewer to allow for the syrup to soak through evenly. Pour syrup over and enjoy with ice-cream or cream (or both as my husband likes to do)

Notes

If you are conscious of the sugar content you can remove the syrup, making this a lighter (marginally healthier but not really), fluffier cake. Apologies for the half eaten finished product, it seems we couldn't wait!

  • I like the idea of chocolate in this. I’ve only ever tried it on its own. And Love the idea of an extra handful of choc bits to snack on. Its like you know me 😉
