Super easy and so yummy … you cant stop at one piece !


Ingredients (makes 80 )

  • 8 Eggs- room temperature
  • 250 Grams caster sugar
  • 500 grams Almonds -Natural
  • 350 Grams Plain Flour
  • 1 teaspoon Vanilla Sugar

Method

  1. Beat egg whites until soft peaks form
  2. Gradually add the Sugar.... Beat until sugar has dissolved
  3. Add to dry ingredients
  4. Pour into 2 paper lined log tins
  5. Bake in 170 degree oven for 35-40 minutes or until lightly browned on top and skewer comes out clean
  6. when cool wrap in alfoil and leave over night ( i find this makes it a bit easier to cut)
  7. unwrap and cut in to thin slices. Place slices on to oven trays and into a 125 deg. oven to dry out for around 15-20 minutes

Notes

Note - the slices will crispen as they cool Keeps for ages in an airtight container in the pantry

    • Full almonds. They cut through when you slice it to dry it out x
