This is a fairly easy and pretty basic recipe, that allows for your own additions. You can add herbs of your choice, finely diced tomatoes, mushrooms, pineapple, spring onions – you're only limited by your imagination and taste preferences.


Ingredients (makes 12 Muffins)

  • 2 cups Self-Raising Flour
  • 2 cups Tasty Matured Cheese (grated)
  • 2 cups Skim Milk
  • 2 rashers Bacon (finely chopped)
  • 1/2 small Onion (finely chopped)
  • 1 clove Garlic (crushed)
  • Extra grated Cheese

Method

  1. Sift flour into a large mixing bowl. Stir through grated cheese, bacon, onion and garlic. Gently mix in milk, ensuring well combined without over-mixing.
  2. Grease and flour 12 cup muffin pan, and divide muffin mixture evenly between 12 cups. Sprinkle a little of the extra cheese on top of each muffin.
  3. Bake at 180 degrees C for around 20 - 30 minutes. Check after 20 minutes, as cooking time will depend on your oven. Cool muffins on a wire rack before serving.

Notes

Do make sure that you grease the muffin trays really well, as these muffins are notorious for sticking. Alternatively, use paper patty-pans in the muffin tray. These muffins can be frozen for up to 12 weeks, as long as they're well-wrapped in cling-wrap, or sealed in snap-lock bags.

  • These really are easy peasy. I wanted to surprise my hubby and son when they came home from work by having the cheesey muffins on the table ready for them. They could smell them before they came in the front door. They had such big smiles on their faces! As for freezing the left overs, there weren’t any!

  • These are great. I lined the tin with patty pans and used wholemeal flour for an extra kick of fibre and they were great, I frezzed mine too and they tasted great reheated back up.

  • These look great for lunchboxes. Does the bacon have to be cooked first? I’m never sure when adding it to savoury muffins and tend to cook it. I will add grated carrot and zucchini ad some corn. Thanks.

    • Lovely, I’ll be trying these with grated carrot & zucchini too, but leave out the bacon.
