Nice for a sunday brunch


Ingredients (serves 2)

  • 1 box frozen chopped spinach
  • 1/4 Teaspoon freshly ground black pepper
  • 2 Large Eggs
  • 1 Cup Milk
  • 1 Tablespoon Plain Flour
  • 2 Tablespoons Grated Tasty Cheese
  • 1 1/2 Tablespoons Fresh Grated Parmesan
  • 2 English Muffins, split and toasted

Method

  1. Rinse the spinach under warm water in a colander until it is thawed, then squeeze dry. Sprinkle with a pinch of pepper
  2. Divide spinach in half, and place each portion in a small baking or gratin dish. Form into a little nest.
  3. Crack an egg into each little nest, season, and bake for about 15 minutes, or until eggs are just set
  4. To make the cheese sauce, put 80ml of the milk and the flour in a bowlm whisk until smooth
  5. Pour into a saucepan, and slowly add remaining milk while whisking over medium heat.
  6. Whisk until bubbles start to form around the edges, then add cheeses. Whisk until cheese has melted
  7. Slide cooked spinach and egg onto muffins, top with cheese sauce and serve with fresh coffee
