This may be controversial, but we’re pretty sure this is the most delicious (and easiest) lamington recipe ever!

Just four ingredients, with the hero being Nutella, you’ll be making these over and over again. It’s such a simple, but stunningly delish recipe.

Ingredients (serves 6)

  • 2 unfilled sponge cake rectangle slabs (450g total) (most supermarkets have these) or a 450g Madeira cake
  • 160ml (2/3 cup) thickened cream, whipped to firm peaks OR pre-made vanilla frosting
  • Hundreds and thousands, to decorate
  • 90g Nutella® (15g of Nutella® per lamington)
  • Fresh strawberries

Method

  1. Use a small serrated knife to remove the brown crust from the sponge slabs. Cut each slab into 6 even pieces. Or if you dont want to cheat, please follow a basic sponge recipe and bake in 18cm x 28cm Lamington tins with high sides.
  2. Use the same knife to cut sponge pieces in half horizontally. Spread bases with a little whipped cream then replace tops. Place in the fridge for 15 minutes to firm slightly. You can also use pre-made vanilla frosting in the centre.
  3. Spread the Nutella® thinly over the sides and top.
  4. Grab a plate and spread out your 100s and 1000s. Carefully roll your Nutella covered sponge in hundreds and thousands, or simply sprinkle the sponge with 100s and 1000s. Repeat with the remaining Lamingtons, Nutella and hundreds and thousands. Place in the fridge for 15 minutes or until firm. Serve with fresh strawberries

  • Oh wow! This sounds and looks delicious!!! Nutella is one of my favourite flavours and to combine it with a lamington style dessert, it sounds heavenly. I also love the touch of the hundreds and thousands to appeal to those young at heart. Will have to give this a try one day!

  • Now I love a good old Lamington and these look amazing but not a Nutella fan so might just replace that with some melted chocolate

  • These look so good and so simple to make. You could add some jam too and I’d provably swap the hundreds and thousands out for coconut just to be a bit more traditional and also because I prefer the softness of coconut over the crunch of hundreds and thousands but either way.. yum.

  • These look so cute and fun- gotta love a cheats way of ‘baking’ something! So easy and sure to be a favourite at any party! Nutella is certainly a very different way of doing icing too! This recipe is 100% effort free and perfect for busy mums- love, love, love!

  • Looks delicious and I am sure will be treat to eat. Unfortunately my family are not Nutella fans, so if I would try to make, I am sure it will not be eaten very quickly. Glad to pass on this recipe to my friends and my family to try and test.
