An easy but showstopping desert to impress your friends and family.. that tastes as good as it looks !


Ingredients (serves 16)

  • BASE
  • 500 grams Plain Flour
  • 200 grams sugar
  • 250 grams Butter
  • 3 Eggs
  • FILLING
  • 250 grams Cream Cheese- softened
  • 4 Tablespoons Icing Sugar
  • 2 Teaspoons Lemon juice
  • 4 Tablespoons Cream
  • Fruit and berries for decoration
  • 2 Tablespoons Brandy
  • 2 Tablespoons Apricot Jam

Method

  1. BASE Mix together flour and sugar
  2. work in butter with hands Then add eggs ..Mix with hands until just mixed together
  3. Spread onto 22-24 cm greased Flan tin press around with fingers until evenly covering base.. and sides
  4. Blind bake for around 30-35 minutes or until brown on the edges Allow to cool completely
  5. FILLING PLace all ingredients in a food processor Mix till smooth
  6. Transfer base to serving dish Spread filling over base. Refrigerate for a short time
  7. Decorate with berries and fruit of the season
  8. GLAZE warm brandy and jam over low heat until jam has thinned ..cool slightly using a pastry brush carefully brush fruit with glaze to make it shine

Notes

If you have time make the base and fill 1-2 days before you need it and decorate on the day... the filling softens the base a little Be creative when decorating ... the possibilities are endless !

  • This fruit flan looks wonderful I think I might try to make it for next Christmas it would be a big hit at my in laws house. Looks quite easy to make as well and delicious with all the fresh fruit. The glaze over the top at the end is a very clever idea too.
