Ingredients

  • 1 kg chicken cut into serving sized pieces.
  • 1 tbls vegetable oil
  • 6 cloves chopped garlic
  • 4 bay leaves
  • ½ cup Soy Sauce
  • ¼ cup White Vinegar
  • 4 Potatoes, cut to chunks
  • ¼ tsp Peppercorns
  • Salt and Sugar to taste

Method

  1. Saute garlic until light brown, then put the chicken pieces into the pan, stirring occasionally till the chicken meat begins to turn brown, add the potatoes, stir well, then add soy sauce, peppercorn, bay leaves, stir well, then the vinegar.
  2. Let it cook for a while, stirring every now and then, until meat and potatoes are tender. If it becomes too dry, you can add a small amount of water to prevent it from drying out, season to taste and don't forget to add a bit of sugar.

  • This would be full of flavour, and so easy to make. I’m guessing that you could also add almost any extra vegetables to it, for extra flavour and goodness. I love the idea of using a little vinegar for something different, and yes, a sprinkle of sugar would make it even nicer.
