Delicious gluten free savoury muffin. Add any veggies you have in the kitchen.
Add cheese if you like.


Ingredients (makes 6 Muffins)

  • 4 Eggs
  • 1/2 cup Coconut flour
  • 3 Tbs Butter or Nutelex, melted
  • 1/4 cup Water
  • 1 tsp Baking powder
  • 1/2 cup Grated zucchini
  • 1/4 cup Diced tomato
  • Salt and pepper to taste

Method

  1. Heat oven to 180°C
  2. Beat eggs until fluffy.
  3. Add coconut flour, melted butter or Nutelex, water, and baking powder. Mix well. Then stir in zucchini and tomato. Season with salt and pepper.
  4. Pour into muffin tray and bake for 25 minutes.

** get creative and change up the veggies. Olives & semi dried tomatoes would be amazing.
  • This is perfect for kids lunch boxes.

  • Can I use rice flour instead?


    • I have only made these with coconut four, but I dont see why not. Just add a bit more flour if using rice flour.
