A sweet, yet healthy brunch treat.


Ingredients (makes 1 topped crumpet)

  • 1 Golden Crumpet with Oats
  • 1/2 tub Greek honey flavoured yoghurt
  • several Dried apricots

Method

  1. Cook crumpet
  2. Allow to cool slightly and top with greek yoghurt
  3. Decorate the top with several dried apricots.

  • This looks like a nice healthy topping for crumpets with oats. The oats are good for the body generally, the yogurt is great for supplying probiotics and the honey is wonderful for a healthy immune system.

  • Honey-flavoured yoghurt is absolutely divine, and I love the idea of combining it with apricots. In the absence of dried apricots, I’d try this with some of my home-made apricot jam.
