Really quick and easy to prepare, this Greek chicken will become a regular family favourite. Its fresh and bright and tastes amazing.
Tastes great cooked on stove top, but it’s elevated to the next level when done on a BBQ grill and gets the smokey flavour to it as well
Ingredients (serves 4)
- 2 Large chicken breasts, cut in 1/2
- 1.5 Lemons, juice only
- 2 cloves garlic crushed
- 1/4 cup Olive oil
- 1/4 cup Flat leaf parsley, finely chopped
- 2 TBS Dried oregano
- 1/2 tsp Cumin powder
- 1/2 tsp Chili flakes
- 1 tsp Salt
- 1/2 tsp pepper
Method
- Mix all ingredients together bar the chicken and stir to combine.
- Add in the chicken and marinade for 1 hour. Do not leave any longer as the chicken begins to break down and 'cook' from the lemon juice
- Cook on a BBQ grill until cooked through. Serve with chips and a Greek salad
Notes
If any leftovers, try them in a wrap cold the next day with some crumbled feta, black olives, lettuce and a dash of mayo. Really good!
