You just can’t go wrong with grilled chicken and this here is finger licking good!

If you don’t want to cook on the barbecue then this dish can be cooked in the oven. Place a little chicken stock at the base of the baking tray to prevent the sauce from drying. 180 degrees (fan-forced) covered for 30 minutes and remove the foil. Cook for an additional 15 minutes


Ingredients (serves 8)

  • 2kg Chicken Maryland pieces
  • 1 Bottle of your favourite bbq sauce marinade
  • 3 sprigs Rosemary
  • Sea Salt Flakes
  • Drizzle olive oil
  • Garnish:
  • Lemon Wedges
  • Parsley
  • Olive Oil
  • Sea Salt Flakes

Method

  1. 1. Place marinade ingredients together and allow to sit in refrigerator for a min of 3 hours (preferably overnight)
  2. 2. An hour before cooking take chicken out of refrigerator and turn on barbecue to very lowest heat.

Notes

Cooking tips: ▪️If you are using a larger barbecue then place the outer flames on and place the chicken in the middle of the barbecue. The chicken will cook in indirect flame and this will prevent chicken from burning. ▪️If your barbecue heat is too high the chicken will colour on both sides but not cook in the middle. If this happens cover chicken in an oven proof dish and into the oven to cook through. ▪️Cooking time will vary due to the different sizing of the chicken. The chicken I used were large pieces.

  • I’m not such a huge fan of Maryland. I’m always excited by the pieces of chicken, but mostly disappointed that there’s not enough meat.

  • Thanks for your recipe. Love your times for an oven, but you don’t say how long on the BBQ. How would this go on a George Foreman Grill for instance and how long would that take?

  • Yummo! I’ve found chicken Marylands hard to get a hold of these days!!! They’ve always been sold out when I’ve tried to get them. They must be the hot thing at the moment.
