I am a big fan of relish and also make my own every year.


Ingredients (serves 1)

  • 1 Golden crumpet with oats
  • 1 slice of ham
  • 1 spread of tomato relish
  • 1/2 slice of cheese
  • 1 spread of margarine

Method

  1. Either place crumpet in Airfryer or toaster. Cook until warm.
  2. Spread with margarine, then place ham on, then spread relish on top. top with half of a slice of cheese, You can tear into strips
  3. Place into Airfryer, oven or grill until cooked.

  • I love home-made relish, it’s got so much more flavour than store-bought. I’d love to try this with some corn relish too, but I’m a “butter” fan, so I’d definitely use that in preference to margarine.


    • I love home made relish as well and hate it when I run out of mine.



      • I bought some amazing Brinjal Indian eggplant pickle from a little company called “Two Hills and a Creek” (they’re local here in South Australia). Tried it on crumpets with some cheese & avocado and it was to-die-for!
