For additional flavours or to mix it up if you make this healthy brownies recipe a lot, add cinnamon, chai spice, or even some chilli powder for some exotic flavour.

Ingredients

  • 2 cups Shredded Zucchini
  • 1 cup Almond Butter
  • 1.5 cups Cocoa Nibs
  • 1 Egg
  • 4 Dried Dates
  • 1/4 cup Apple Sauce (homemade or store bought with no added sugar)
  • 1 Vanilla Bean Pod (inside only) or 1 tsp Vanilla Extract
  • 3 tbsps Cacao Powder
  • 1 tsp Baking Powder

Method

  1. Preheat oven to 180 degrees celcius.
  2. Place all ingredients in food processor and whizz to combine well.
  3. Pour mixture into greased or parchment paper lined pan.
  4. Place in oven and bake for 45 mins.
  5. Wait until brownies are cool before cutting and removing from pan.

  • The recipe doesn’t sound too difficult but I’m not sure about the taste though…

  • A healthy brownie sounds great, but can you get all the ingredients at the supermarket? What are cocoa nibs and cacao powder?


    • Yes, I was wondering about how easy it would be to get all the ingredients too! I’m a more last minute, cook with what is already in the cupboard kind of person!

  • This is exactly the type of recipe I need for my family. We try to make things from scratch for the school lunch box, but I haven’t ventured too far into using healthier alternatives in my cooking. I will be sure to print this and get the ingredients from the supermarket next time I shop. I’m sure it will taste just as good if not better than my sugar filled brownies
