For additional flavours or to mix it up if you make this healthy brownies recipe a lot, add cinnamon, chai spice, or even some chilli powder for some exotic flavour.

Ingredients

  • 2 cups Shredded Zucchini
  • 1 cup Almond Butter
  • 1.5 cups Cocoa Nibs
  • 1 Egg
  • 4 Dried Dates
  • 1/4 cup Apple Sauce (homemade or store bought with no added sugar)
  • 1 Vanilla Bean Pod (inside only) or 1 tsp Vanilla Extract
  • 3 tbsps Cacao Powder
  • 1 tsp Baking Powder

Method

  1. Preheat oven to 180 degrees celcius.
  2. Place all ingredients in food processor and whizz to combine well.
  3. Pour mixture into greased or parchment paper lined pan.
  4. Place in oven and bake for 45 mins.
  5. Wait until brownies are cool before cutting and removing from pan.
